Is there a way to turn off the grey text that appears if someone issues a command? Like for example, I do the /playsound command, and to other players, it shows the grey italic text of "Played -soundname- to -playername-*
I don't believe so, you can disable it on command blocks and others can only see player done commands if they are OPed. So the only way to hide it would be to deOP everyone but yourself.

This is correct, there is no way to prevent this apart from manually de-opping players. Note you cannot use the /op or /de-op commands in command blocks.
