Inside the Xbox Insider Hub got to "Insider Content" and select "Minecraft: Win 10 Edition" ON the "Info" page, click the button marked "Show in Store" You should be able to download the beta at that point.
When I originally signed up for the beta it took a few minutes before my account was registered with the Windows Store, so be a little patient.
I joined the beta, I have Xbox Insider app, I start up the game and it stays on 1.1.5. Help?

It did the same thing for me. Here's what I did:
-Bust open the store.
-Click that person-shaped button to the immediate left of the search bar.
-Click "Downloads and Updates."
-Click "Get Updates."
Any apps that have updates available to you will now download their updates, including Minecraft.
