Tackling the subject of armor, I think "gold" is the hardest to fit into the Star Wars universe, so I did that one first.
I saw mention of "Bronzium Light Armor" on Wookepedia. C3PO is also made with Bronzium.
So, Gold will become Bronzium. Gold Nuggets will be something like "droid parts" and gold food items will become "cybernetic" food items.
Gold Nuggets + Apple = Golden Apple becomes
Droid Parts + Apple = Cybernetic Apple
Below is the skinless C3PO version. It's using the armor "leggings" and "helmet". I learned that the leggings use a different png which will also cover the torso but not the arms. So below is leggings and helmet only, and that's why the arms look normal. Technically, the helmet pictured will not show because it gets covered by the "hat" part of the helmet. If a future version of Minecraft has a "layers of armor" feature, then we're set up to handle it.
Here's the helmet. The eyes "show through" from underneath:
Torso. 3po's mid-section that has all the wires in it also shows through from underneath.
...And the leggings. Protocol droid whose parts can be salvaged as bronzium armor.
Most of the grass, like on Naboo, Endor, and Kashyyk, looked like regular grass. Now, if it was an "Avatar" texture pack, that's be a whole 'nuther story. But I think most of nature in Star Wars looks pretty much like earth.
I could be swayed, but taking a look at all the other stuff that has to get done, I think textures like sand, dirt, grass, snow will be left as they are.
• You could use CIT (Custom Item Textures) to have multiple lightsabers depending on the swords name. For example: a diamond sword called "Vader" would be red and have the handel style of vaders.
• Also using CIT, you could make diffrent uses of the bow. The normal one would be a gun, but one called "Ewoke" would be a crossbow, etc.
You don't have to add these, but eventully, maybe you could. Just a starwars fan thinking about textures...

Kahr is testing a new feature for MCPatcher: Custom Item Textures. It's still in beta, though you can play around with it in the latest MCPatcher versions. You can specify alternate textures for items based on stack size, enchantments, damage values, and nbt data. You can do a lot of cool stuff, if you can figure it out. One thing that seems to be popular is making a super-fancy sword texture that only appears if the player uses an anvil to rename it to "Excalibur."
Make your fancy sword sprite, and stick it in your /cit folder (which is new). Unlike CTM, you don't put it in a subfolder in the /cit folder. Name it excalibur.png (or whatever). Also make an excalibur.properties (also doesn't matter, as long as you name it the same as your png). In the properties file:

Here's Diamond armor, made to be Mandolorian Armor. The colors are altered so it's not exactly Boba Fett. I think the CIT stuff mentioned earlier would be a good way to get Boba Fett armor by making it on an anvil or something.
Here's some versions of Mandalorian Armor. It's all in the same basic blue-green color palette, so it's both reminiscent of Boba Fett, and faithful to the original Diamond color.
The blocks are Diamond Ore and Diamond Block, which have become Beskar Ore and Beskar Block.
