ElCheco Resource Pack is a WIP and many textures are incomplete
Color-wise I think you've got the feeling down pat! I've never been to the Mediterranean, but from pictures I've seen this feels very much like a coastal Spanish town.
The pack doesn't have the most consistent feel, though. While the manufactured textures like planks or clay are forgivable despite their low contrast, things like the environment seem inconsistent. The grass is very smooth and flat, feeling almost more like cement painted green than grass. On the other hand, the leaves are very detailed and have a lot of depth. The standing grass is an odd middle-ground, being totally flat and lacking detail while still having individual strands that suggest that it should have more detail. They also don't match color-wise with the grass block top.
This is a really nice pack so far. I like it a lot. It just needs a little more work to settle the inconsistencies in the level of detail and degree of roughness between blocks.

I live in Portugal, and I can say that this reproduces the feel I have of the eighbour spanish towns quite well. Good job on that!
I would, though, ask for a bit more detail on whatever those colored blocks are. They're just plain solid colors
