I want to say I love this pack, I've used it for a very long time. However, I'm having trouble with the fence texture. It doesn't show up in my game. Is anyone else experiencing this? It's just the fence posts. They seem to be the default texture and I can't seem to find any fencepost texture files in the pack download...

Fence Posts just use the various wood plank textures. If wood planks are displaying properly then Fence Posts should as well. The only other possibility is that the .json file for the Fence Post model being overwritten by another Resource Pack or mod.
If you mean Sunny, Spooky, and Christmas variants, they're setup as resource packs for 1.8 so you just have to place them in the same folder as default and add the one you want active above active above the standard Jolicraft pack in the Resource Pack list. Hope that makes sense.
I really love this pack, but I dont really like the cobblestone. (This includes the moss stone and cobble walls) Is there a way I can get a different cobblestone that still fits the jolicraft look?
Hey Andre, can you post a download link for a folder with all the alternate textures (assuming you have them)? The website doesn't work anymore and a lot of people are confused about that.
Also, you forgot to update the enchanting gui in 1.7
