Not directly. EntityPlayerSP only exists on the client side, EntityPlayerMP only exists on the server side. Attempting to use these classes from the wrong side will crash and/or break things.

I'm trying to get some data I've made in a PlayerData class using ExtendedEntityProperties of the player, and show it on a GUI Screen. I can get the EntityPlayerSP in the GUI class, but I need the MP to access the correct data from the PlayerData class.
You need to sync the data from the server to the client for the client to be able to display it. Do this when the player logs in and when the data changes.
This site explains networking in Minecraft, including the Simple Network Implementation (which you should use).
IExtendedEntityProperties has been deprecated in 1.8.9 and removed in 1.9. It's been replaced by the Capability system.
