I definitely agree with those. Since they didn't appear on the search, I'd also like to suggest for the future; Jackalopes or their real-world counterpart the spring hare (they're fast), Flying Dragon (the tiny lizard, not the mythical creature, they're like scaly flying squirrels), thylacine/Tazmanian tiger (like wolves, but different), kakapo (What do you get if you cross an owl with a parrot with a penguin?), and bumblebee bats (bats the size of hummingbirds, native to Thailand).

Don't expect to much from the Bison yet, it's currently just a remodeled Cow because I'm still thinking of original features.

There are species in Africa that live on the ground (desert biome?) and species in Asia that live in trees (jungle biome?)
They sleep and defend themselves by rolling into a ball, they eat ants and termites using a long sticky tongue (the longest in proportion to body size)
Behavior you could add could include rolling into a ball, climbing trees, eating termites from termite mounds (a new block you could add that spawns in jungles and deserts)
They could drop pangolin meat and scales (scales for armor)
In fact I like to see this kind of animals replace the original cow, sheep, pig which looks like escaped feral livestock.
