Edit: Ok, got it to work. You just have to install it differently. Although, there was ONE villager without a skin (He's a butcher). Everyone seemed normal. Haven't really interacted with them other than just getting close enough for them to greet me.
Anyway here's some text instructions on how to install for the mac:
1. Download and unzip both modloader and MCA 3.0 Beta for MC 1.3.2
2. Locate minecraft.jar (google if you don't know how)
3. From Mac App Store install "The Unarchiver"
4. After The Unarchiver is installed right click the minecraft.jar and open with The Unarchiver
5. You should now have a new folder called "minecraft" go into it.
6. Locate and delete META-INF folder
7. Install modloader (drag the files from the modloader.zip you downloaded earlier into the minecraft folder you created with the unacrhiver and replace all when prompted)
8. Open the Minecraft Comes Alive 3.0 Beta folder you downloaded and go to "Place Contents in Minecraft JAR"
9. Drag contents into the minecraft folder you just installed modloader in and replace all when asked
10. Go back into the main minecraft folder where the bin, saves, texture packs, folders are
11. If it does not already exist create a folder named "mods" exactly like that but without the quotes
12. Drag the contents of the "Place Contents in mods Folder" folder in the into the mods folder you just created.
13. If it does not already exist create a folder called "config" exactly like that but without the quotes
14. Drag the contents of the "Place Contents in config Folder" folder into the config folder you just created
15. Go back into the minecraft jar file you installed modloader and MCA into.
16. Select all .class files and folders by hitting "Command + A"
17. Right click a file (doesn't matter which one) and hit "Compress 1284 items" (Should be around that many files selected)
18. After it's finished find a newly created file called "Archive.zip"
19. Copy that folder and paste it up one level (In the folder where the jinput.jar and ect. are located)
20. Rename the original minecraft.jar to something else.
21. Rename the Archive.zip file you copied to "minecraft.jar" (even replace the file extension)
22. It should ask you if you want to use ".jar" or ".zip" select .jar. If it doesn't ask you, you have a problem.
22 1/2. If it didn't ask you if you want to use ".jar" right click it and select "get info" from there find the "Name & Extension" field. Select whatever is there and replace it with "minecraft.jar". After you exit the Get Info window it should then ask you if you want to use .jar.
23. Run minecraft and see if it worked. If it did, great! Pat yourself on the back. If not, try again from scratch. These instructions are probably confusing maybe you'll get it right on the second try.
This isn't the first time this is happened where I've had to install MCA like this after a new update. If you're using this installation method for MCA I have found in the past that other mods will tend to crash as a result, but that's just me. Try your luck if you're feeling bold.
----------------
Edit 2: Found a glitch/bug. I'm on a mac so someone with a PC should test it as well I guess.
When giving a gift to a villager it works like you expect it to unless you save and quit the world and re-enter. When you do that you can regift the same item an unlimited amount of times and you keep the item, they react the same way and their hearts go up. However, if you exit minecraft completely and reopen the world it goes back to normal unless you save and quit and reopen again. Haven't been following the forum so sorry if this has already been reported.
Oh, and apples take away 6 hearts while seeds give 2? Seems odd to me is all but whatever =
-----------
Edit 3: I wanted to do some more bug testing, so I went mining for awhile to get the materials for a wedding ring to get married. About 1/3 of the way in I turned to peaceful, it was normal before (not sure if it has anything to do with it). I finally found the gold and made a ring but when I went back to the village everyone was gone. All of the villagers disappeared. I tried closing Minecraft and re-opening it but they wouldn't re appear. I even tried changing the difficulty back to normal and restarting.
I got desperate and made a circle of redstone, gathered my most valuable belongings and placed them in the center and activated it... Unfortunately the transmutation didn't work and as you can see from the screenshot:
My right arm is there but my left is completely gone. It was taken because of my foolish effort to raise the dead villagers... One should never use alchemy to raise the dead...
Ok, FMA jokes aside, I went caving, don't think I went too far, came back and the villagers were gone. All of them. I had it on normal for a little while at night, I don't know if zombies attack MCA villagers or not, and then changed it to peaceful while caving. Restarted minecraft a couple of times changed the difficulty to normal and whatnot. I don't think they were killed though, there were houses with closed doors so zombies wouldn't have been able to get in and there were no drops or anything.
Sorry if my post is absurdly long.
--------
Edit 4:
Ok so I found out what made the villagers disappear. When you go too far away from them. Out of render distance I guess.
Also, I created a few more worlds and the amount of villagers without skins seems random and isn't affected by "occupation" or "type"
-------
Edit 5: Missing villager skins on mac appears to only affect male villagers.
Sleeping guards still hit monsters if they get too close. Thought that was funny.
Just a suggestion, but could you re - skin the villagers when you marry them? The farmer women are usually still wearing their overalls even after when you marry them, and that can become a bit of a pet peeve. Could you make them look normal, like say a Dress or something? Normal clothes? Just a thought

Now that's just being picky.
I don't really like that, because then it'd get on MY nerves that they would not be wearing the same clothes as when I married them.
I'm having a problem with this mod. I installed it this morning and played with it for a while and it worked fine, but now I can't find any villagers and if I spawn one they don't move at all.
i installed this MANY, MANY, MANY times the right way, and minecraft keeps crashing

What's wrong?
Remember to use spoiler tags!
Try my Mac installation instructions up a few posts. It's on this page. Worked for me.
For now it's the new right way.
2. What happened before it crashed? I was trying to left click on a villager in a new world to talk to him. There is no crash report, it just said 'Internal Server Error" and kicked me from the game, as soon as I left clicked on the villager. 3. Any other mods? I am running optifine. That is all. 4. Are you sure that it's MCA? It has to be MCA as only MCA would have anything to do with left clicking on a villager.
i was attacking a female villager (i was spawning them to choose a wife and killing the ones i didnt like) and the game crashed twice
here is the second crash report:
Minecraft has crashed!

I don't think so.. I haven't tried it, but also, why would you? In real life, would your wife want you to change her name ._.?
Now that's just being picky.
I don't really like that, because then it'd get on MY nerves that they would not be wearing the same clothes as when I married them.

It has to be MCA as only MCA would have anything to do with left clicking on a villager.
here is the second crash report:
