Yes you can & yes, put them into the mcpatcher folder structure that mimics the minecraft folder for mobs, Variant names must start at the number 2. For example: creeper2.png would be the first in the mcpatcher folder (if you have creeper1.png, that one will not work).
I would like to know if you can make a modded mob have randomized textures. In a resource pack of course.

I have no idea honestly. I'm not using any mods that add mobs at the moment. It can't hurt to try it.
