But to actually answer your question, you need to define a particle texture. Right now you have three textures, "0", "1", and "2". You need a fourth one that's called "particle". You can assign whichever texture you think is the most appropriate out of the other three, or a different texture altogether.
I don't know. I'm strictly freeware, so I don't use Cubik. If you're having issues with your software, you should ask on the product's forum rather than here.
So I created a 3d block model for crafting table, it works fine but when i break it, the particles are black and purple..

I see the 0, 1, 2, that you have on the file, but Would I need to add a third line called ("3":blocks/texture:dirt) ?
