Not in Minecraft Java Edition. It's apparently possible in Bedrock, but as far as Java goes this isn't a vanilla game feature at all. Optifine is absolutely required to use this Optifine-exclusive feature.

Macs aren't special. Java runs on Windows, Linux, Mac, FreeBSD, and probably just about every other operating system made in the last decade or so. And ultimately, everything for Minecraft Java edition just needs Java installed. Once you've got that, a computer is a computer is a computer so far as Minecraft is concerned.
Well... unless it isn't a very good computer. A common reason that Minecraft won't load something is a lack of system resources (graphics memory or RAM) available to Minecraft. Some things like high-res textures or really complicated models require more system resources than your average resource pack. You can adjust your settings in the launch arguments (Google "allocate more ram to minecraft"), but ultimately you're restricted by the device you actually have.
As to the formatting that a .jem file uses, I suggest checking the Optifine Docs and reading carefully through all of the CEM (Custom Entity Model) files.
Is it possible to tie custom entity models to optifines random mob feature? I dont want to replace every creeper in the game with a new model for example, i want to give various textures and have them spawn randomly.

Ok, I was thinking of creating a few different boat models.
I'm researching to see if you can create variations of an entity based on their type:
So an Oak Boat would have a different model from a Spruce boat...Acacia, Dark Oak, Brich... ect....
Is that possible or maybe something we could implement in the future?
