I have seen these type mods on older versions of MC, but I have been away a while. I could not find anything like these for 1.12.x and I do not know if there are abandoned mods or not. So I would like to request that someone create these mods for 1.12.2 or maybe pick up the mantle for old mods no longer being updated by the OP's.
1. Easy Crafting Workbench - Displays list of iitem that can be created with the resources you currently have in your inventory. Bonus if the MOD takes into consideration if the player is using a backpack mod or other portable storage solutions.
2. Customizable Enchanting Table - Gives players the ability to select whatever enchantments they want the tool/item to be enchanted with. Possibly the options to remove any enchantments they no longer want on the target object. Maybe be able to ADD enchantments or IMPROVE enchantments that are already imbued on the object. A repair feature would be good as well.
3. (This is sort of a big one) City Building/Management - A MOD that allows the player to select a point in the world where NPC's will gather over time and build a functioning city. Various structure types (blacksmith, general store, horse breeder, food vendors, farms, hospitals, guard towers, housing, zoo, mayor's house, magic shop, NPC Temp Hiring business, and the list can just go on and on obviously). The player could have the option to have the city completely manage itself with an NPC Mayor. The player could opt to be the mayor of the city (ie. simcity for minecraft) and they can then choose what gets built, when and where. There could be a tax system to pay for everything but the player could use their own money/resources as they desire. They can hire/fire/train guards/militia for the city. They can use a long list of configuration options using a GUI interface to set all sorts of things for the city such as *how many guards *crime/criminals on or off (a jail maybe?) *Does the city use actual resources to build everything or not *Punishments for various infractions ie. murder, trespassing, whatever gives a fine, lockup time or death by guards *max city size *max population *tax rate *population growth rate *walled city or open city *how powerful/weak city guards are (or varying in strength by rank and pay) *Families or Individuals occupy city *Monsters allowed to spawn *Monsters allowed to wander in *Monsters allowed to attack *and a whole lot more. Like I said this one is a big one but it is one I have wanted to see for a long time. Maybe there could even be some kind of an adventurers guild that gives quests to the player, and heck what about the possibility of multiplayer??
4. (Another Big One) Ultima Online Minecraft - Sort of a total conversion MOD that basically speaking creates a gameworld that encompasses as much of the UO game world as possible. Static maps, Static Dungeons (or random), all the NPC's and Monster's from UO, the training/skill system, the magic system. I could go on forever on this one as well, but it would have to be done by someone who was a huge UP fan and if they are then they will know all the really cool features that could be incorporated into MC to make it into a MMORPG MINECRAFT/UO WORLD.
5. A railway/train MOD that expands the current minecart system a lot, but maybe not as complicated and confusing (for stupid people like myself) as other MODS. Older rail mods were really cool, but they were also too complex for some of us. I would like to see a rail system that uses railway stations, auto/smart track switching according to a very simple TICKET system. Auto/Smart minecart/chest loading/unloading according to either a ticket system as well or maybe configurable by whatever resouirce is in the cart. Maybe carts/trains/cars that do not stop everytime someone/something is on the track.
6. Better Ocean MOD - A system that would allow the generation of more realistic oceans. Such as oceans that are very expansive, with mostly DEEP water (ie. water goes from 64 to bedrock. Not littered with islands making it hard for the generation of big open water areas. This could allow the inclusion of some really cool things like realistic size whales, large ships/sailboats/fishing boats, scuba diving stuff, ocean storms, waves??, pirates and pirate ships, ocean transportation stuff. I'm sure we could come up with more things for realistic ocean generation.
7. Take my City REQ and expand it to a KINGDOM!
That's it for now I guess. Hope I have piqued someone's interest. Really hope I am not requesting things next to impossible on some of them.

I see where you're coming from for some things here, but in modern versions there is really no need for things such as these with things already in game or even things that just have no need in the first place. You did catch me with the railway thing though, I'm currently writing down ideas for a big mod I'm gonna work on and that could be a good thing to add, as movement in game is something annoying in vanilla and hard to do in most mods without extensive knowledge of the specific mod.

#1: vanilla's crafting book, so no need for a mod xD
#2: enchanting plus (alpha available, but still in the process of updating)
#3: harvest festival (1.10.2) or minecolonies maybe?
#4: probably too much for a single mod, but you could have some mod for dungens and others for the magic ralated stuff
