So I'm currently working on textures for a Skyrim in Minecraft mod and was wondering if anyone wanted in on this with me since I can't code, but I can texture, and would like some staff to help me. I want to make this blend in as seamlessly as possible into vanilla Minecraft as possible but still have all the aspects of Skyrim that we all know and love. It's gonna be an intense amount of items, mobs, blocks, shouts, etc. so I think you can probably see why I'm here looking for all the help I can get. So those of you who would like to help a poor unknown texture maker out that would make me ever so grateful of the community on this site.
(And yes you will receive credit for helping me make this a reality.)
I'm probably looking for, at maximum, 2 coders and maybe 1, or possibly two, texture-ers, as well as 1 or 2 block/mob modelers. Feel free to post examples of your work in the comments or what have you or just PM me them by email or something, I'll PM you my skype if I like your work.

You could say that again. The idea for a skyrim themed mod has been around since skyrim was released. And yet, no one has come close to it. Few have ever had a release. The ones that have are nothing but a few basic weapons and MABY a food or two. They all try to "Add Skyrim to minecraft". Its just not going to happen. If you could add even a single spell you will have had more success then any one before. But seeing as you have listed the ability to make 16 bit textures, your not going to get anything.

I'm right there with ya. Although the logical thing to do would be to break it down into parts with the spells being the last thing developed(Although who are we kidding they would be hard as heck to do). You could in theory with enough patience and maybe a few helpers break it down into several sections:
Section A; Misc Items(The random books, notes , ect you just find laying around in the world of skyrim)
Section B: Food Items(This is wicked easy to do an even setup)
Section C: Tools (the pickaxes ect)
Section D: Enchanted and Non-Enchanted Weapons
Section E: Mobs (Do I really need to explain this?)
Section F: The Magic (GOOD LUCK ON THIS ONE)
With all that being said A-C not hard to do AT ALL,D&E are medium- hard difficultly being dependent on the item and F well we all know how that goes. (Have had a while to think about this !

Kind of, but I was hoping a little bit that I would get some help since I've seen so much good come from the community here before for other people's projects.

For huge projects like this, you'd definitely at least need a kickstart to even begin to get the sort of help you're looking for. If you could learn up on a bit of javascript and put together a clean base mod, or at the very least a texture set and very clear outline of what features would be included, you might be able to get some support. But without dedication &/or some awe-inspiring new idea, there just won't be any traction.
Like Eruraion said, a lot of people have tried before, and unless there's something distinct to separate your idea from those failures, it's just another concept that nobody - especially an experienced modder with the capability to make it a reality - wants to touch.
