What is wrong with you people? You keep saying, "this is great, it will make minecraft harder! But this bit will make it hard so don't do it. It is a hard mod. You don't make hard mods less hard. This mod is literally perfect.

TFC wasn't aiming for realism, anyway. It's about making Survival more "believable" and giving the player a sense of accomplishment.
For some of the stuff mentioned in the OP, TFC does come into mind. The mod has improved a lot ever since someone mentioned it in the first page, and it's fun playing the mod. Unfortunately, since it is a full conversion mod, it may not be compatible with a lot of mods.
For the villagers part, there is Minecraft Comes Alive. It doesn't have the Hunter part, though, but I think that would be a nice addition.
For the weight part, I am reminded of dmillerw's Weighted Inventory mod, which unfortunately has been discontinued.

I would at the very least be interested in giving it a shot... not promising anything. But I feel I could handle the majority of it. The main thing that I'd be lacking would be an artist (I am very, very terrible when it comes to textures). It's something I'd like to give a go. I loved your Idea but the Active Villagers thing is already in Minecraft Comes Alive (MCA) mod.

Iguana tweaks, enviromine, TFC, hunger overhaul, PMP, all add what your looking for in this mod.
Loads of useless stuff increase realism, because not everything in reality had set or unique uses
this is a lot of stuff to make minecraft really realistic, but also extremely hard in my opinion......
