I personally think it would be pretty cool to have a parallel dimension where there is an NPC default skinned character in survival mode like you are as well. The goal of this is to start a new world, in which the NPC's world will be started as well, and race againt him. You must create a portal to his world before he creates one to yours.
If he beats you in the race, he will become to powerful to kill and will probably kill you, take all of your stuff, and destroy pretty much anything you have made. However, if this happens, it is not the end. He will leave the portal behind, fully functional, and then disappear from this dimension into a new one which you cannot enter (basically he is gone from the game forever now). You may then enter into his world and claim it as your own and loot the place. Then you can continue on regular survival.
If you beat him in the race, you must enter the portal and enter his dimension. He will most likely be off farming and mining, unaware of your presence. You will prabably spawn hidden somewhere, so no worries. Take him by surprise or go full on with iron golems, kill him, take his stuff, and own his base. He will not respawn. You have just won and now can continue regualr survival.
His AI would be basic. If he notices you in a 3 chunk distance from the front of his head, he will either hide or attack. The NPC could create iron golems and construct premade buildings and farms, and even set up mines, however he does not need to actually do theses things. He may just stand near the object and recieve it in a few seconds. He awlays knows where you are when he enters your world.
The portal could be white stone blocks placed like a nether portal, and the starter would not be water, or lava, but the ender egg, which consumes it in the process. On the destruction of the portal, the ender egg will spawn back you.
Quite complex yet so simple. Please remember, I just wrote a book. Don't tell me I should give this up.
Wow... AI seems impossible, but the idea that there could be a parallel universe to travel to exactly like the overworld would be cool. Then there could be randomly generated structures like houses and mines. This is an awesome idea!

Thanks. The only difficult part would be the 3 chunk notcing distance. Other than that, the stuff can be just spawned.
Sadly without even including the AI it would double the execution time rendering the game unplayable for most.
Here's a thought. Instead of starting his own seperate world, make it so that it is another dimension like the nether loaded on entry. WHen you start your world, it will time you. If you pass a certain time, a portal and the NPC will appear in your world. If you beat that time, it calculates how long it took you and generates the world with realistic structures built by him that would take about the time it took you to get there. No more double executing!
