Unless there is a specific attribute that changes the size, as with slimes, or another value that affects the size, such as the age of a horse (most entities do not gradually grow with age, they just suddenly become adult size), the only way to change the size of an entity's model is to modify the code, or if the mod has one, model file (which as far as I can tell is only possible on Bedrock, unless the mod itself was coded to use a model file, which are otherwise only available for blocks and items on Java).
