I'm not sure which of the mods that I've grown used to are defunct in later Minecraft versions, but my sweet spot remains 1.7.10. It's before the combat went weird, before the oceans got terrifying, before the villagers got complicated. Not that I object to all of that -- some of it even sounds neat -- but mostly I just want to play it a bit simpler. And the features that I would most like to see either never showed up in Minecraft, or are easily handled by mods, so.
I kinda wish I had the time and focus to put together an actual modpack, like a public modpack. I tried before, but got stymied by all the details. And it's kinda frustrating when I'm after XYZ and the only mods that have it also throw in the rest of the alphabet (sigh). Like how I want decorative gems to make mining more interesting, but I don't want five thousand new types of armor and weapons. Or how getting a few sensible options for tools and weapons tends to include a dozen other things that break my immersion. That's part of why I don't move forward in Minecraft (I play newer versions occasionally, but not often): It's just too complicated, and I honestly don't have the time/attention/focus to figure it out anymore.
Nice to know others besides me are back in 1.7.10, though.

are the main ones I'd say, most of these are tech mods I'd like to see updated but I've looked into a few in 1.7.10 (for mod spotlights) and many similar ideas have been updated so it's hard to say besides those I listed or would list but don't remember the name of.

I'd also like to give a nod to the Lapidary mod, which msvisser created for me but which, as far as I recall, never made it past 1.6.4 (and I forget if that version was even finished). Out of the four mod projects I spearheaded and oversaw, it's the only one that made it to a reasonably playable version; Zoocraftia, the Moontown mod, and the Roughin' It mod made some amount of progress each, but at most I recall a proof-of-concept piece from Roughin' It that let me pull bark off trees and make shelters out of it (and make thinner bare-trunk blocks, which was awesome).
Zoocraftia and Moontown were just too big of ideas for a ragtag coding gang to pull together (ah well, we did our best, and I'm glad that people were interested in trying), and modern mods probably account for most of that feel, if you discount the desire to make an actual functional zoo. But I'd still love to see at least a 1.7.10 for my Decorative Gemstone Blocks idea (not all the weird complexity of every other gem mod I've run across to date) and one for Roughin' It (just ran across almost all the basic functionality I want... in a mod made for far more modern versions of Minecraft).
(Those, and my Visual Variety for storage options idea, ideally with an uncomplicated design and some ability to set size and recipes via config. I know that practically no one but me wants small storage solutions, but huge chests make it harder for me to remember what goes where.)

Hey guys! So I'm making a modpack of these brilliant mods that never got updated (or got updated horribly).
What mods do you miss?
Just in general, what are the 1.7.10 mods you like to play with?

Do not ask me to switch to newer versions. I will not. Many mods did not update and never plan to, and newer versions just lost the charm.
The following mods have never got to 1.12/1.15:
