Yeah, cool. By default, it uses the java registered on your system (registry if Windoze), but you can tell it which to use - if you wish to play with java 9 (testing) then you have to force MC to use the old version.
J9 is a way off release, there's a big issue between it and MC - which, I am certain (for economic reasons!) will be resolved before J9 is released.

Switch (back) to Java 8. Forge/FML does not support Java 9 yet, and from what I can find in the GitHub issues, probably won't until at least MC 1.13.
I installed Java 8 u151 (the launcher was set to 8u151, too), and so far have

Aaah, I forgot - I thought just setting the client's default Java as 8 would fix it, instead of the instance.

Um, no. It's not a "way off release". Java 9 released on September 21st, and 9.0.1 is out already - see http://www.oracle.com/technetwork/java/javase/downloads/index.html if you don't believe me.
