Hey, I recently got it into my head to do a cowboy style series of mods, my ideas aren't exactly the same as yours but they might be similar enough. Dunno, you can check it out when i get going on it.
Couldn't it be improved by you know adding a more "Wild West" lifestyle? Such as adding stuff to create rodeo arenas? With NPC Clowns and additional props? Add vehicles like trucks with detachable trailers and such that can hold say 8 horses and 5 bulls?
Why not make a different mod if this already exists? Give it more of a country feel to it with "Wild West" twist. That means, make this mod with vehicles such as trucks (with variants such as pick up, ranch trucks {can be dually}), guns like those which you listed, make compound bows, add hogs to the game, pine trees, mud blocks (dry and wet) and posts, also this is a MUST. Add an iron fence gate. The iron fence gate can be opened the standard way or doubled to pull it open by a rope. Also add clown NPC's and bulls (these have the horns).
So here's the list divided up:
Vehicles, Trucks: Has the design of a Ford, Dodge and Chevy, in the variants of Ranch designs and Pickups
Vehicles, Jeeps: It's a Jeep that can be edited by pressing E, this means doors, roof, hood can be removed.
Add-ons for vehicles: Trailers that can hold 8 horses at a time or 5 bulls at a time or a combo of 3 horses and one bull. The trailer can have a dividing gate to separate the two animals.
Boat trailers: Can carry any kind of boat, fan boat Bass Tracker, kayak, canoe.
Guns: All of the OP's weapon suggestions along with a compound bow, crossbow and 7mm, 45/70, 30-30, 30-06, 270.
Blocks: Mud Blocks (wet and dry), Rock blocks (looks like a rock rather than a square block), red clay (wet and dry), dirt block (powdered form of dirt, nothing can grow in this kind of dirt and there are particles when horses, cows, or pigs run/walk on this block), rye grass (grass that attracts specifically wild animals, used for food plots)
Decoration blocks: Saddle racks (you put saddles on these, they can be set on stands or directly mounted on walls), Saddle rack stands (stands for saddle racks), Deer target (looks like a full sized deer and can be shot at for target practice or to lure deer into a food plot), Tree stand (a climber that allows you to scale up trees and sit and wait for animals to enter the food plot), Ground blind (camo tent for one person that you sit in and shoot animals from).
Seeds: Pine Tree seeds (grows pine trees obviously), Cedar seeds, Tobacco seed (tobacco can be crafted into different things or sold <- primary use), Muskadine seed (a vine that grows sweet juicy berries that are dark blue/dark purple in color and are perfectly round when done but green while growing, can be turned into wine)
Animals: Horses (with variants of quarter, walker, thoroughbred, Clydesdale, paint, appaloosa), Hogs (have tusks, usually black or dark brown and bulky in the shoulder, neck, head area. Can be turned into bacon and ham), Bull (have horns, aggressive animals with Dobby like ears or standard ears, can be turned into burgers patties), Deer (you know what they look like, they favor rye grass but also eat regular grass, they also eat berries and bush leaves).
Apparel: Cowboy hats (Not the giant ones, those look goofy and unreasonable, come in the colors of, black, brown, tan, white, made out of leather or can be bought for 20 gold or emerald coins or whatever the currency is), chaps (made from leather, keeps the pants from being destroyed and keeps you from taking damage if you decide to ride a bull or horse), spurs (attached to boots, used to kind of spike a horse to get it to run faster, can be used by left clicking while riding) Cowboy boots (made of leather, do not have a zipper usually goes up to mid shin, colors Dark Brown and Black), Leather vest (can be worn over other stuff to keep from taking tons of damage if shot in the chest or hooked by a bull). Plaid long sleeve shirt (comes in red and white or blue and white, not standard plaid. Look on Cavenders website to get an idea of how it looks), blue jeans (comes in light or darker blue color, work jeans (comes in tan or standard blue jean colors), helmet (looks like a hockey mask only no plastic visor just wires, keeps from taking a lot of damage if you fall, are thrown, or are hooked or kicked by any animal), Jacket (MossyOak camo color).
Further on the vests they can be edited with text.
