If you enjoy the simple vanilla minecraft then downgrade to an earlier version. No one is forcing you to play 1.8 or the pre-releases.

You can't argue that SOME more action or RPG based elements are ok, while others are vehemently not. It's an indefensible position. Because no matter WHERE you draw that line in the sand, there is exactly one person that is happy with that line. Either you want traditional game elements in the game, or you don't. In either case, there is a game mode to suit.

For a long time Minecraft was about this, as it was what had been implemented before the RPG stuff was tacked on. It doesn't matter to us that Notch ultimately intended to make an RPG when for months what he'd delivered was a survival builder.
With Railroad Tycoon, Sid Meier inspired the creation of many other business simulation games (often with the name "Tycoon" in them), but besides a single sequel many years later (Sid Meier's Railroads), he only did the one. I think Notch is a game designer in the mold of Sid Meier, the pioneering trailblazer who never stays too long in any one place. You can kind of see this from his recent blog Inspiration, motivation, stress, and abandonment.
So on the way to completing his RPG, Notch invented a new category of game that he doesn't intend to pursue. Survival builder set in a procedurally-generated fully editable voxel-based world is a mouthful, so maybe the category will become known as voxel-based survival builders. In the same way that Railroad Tycoon is seen as the original Tycoon game with the railroad theme being incidental, years from now Minecraft may be known as the first survival builder, with oh yeah, some RPG elements.

Downgrading to 1.7.3 throws the baby out with the bathwater. It doesn't make sense to give up the 100 or so awesome things that were introduced with the Adventure Update just to get rid of like 3 or 4 things that suck.

Creative is a completely different kind of game toy. You might as well say "go play with legos".

Your reasoning is stupid, as the things require you to WANT to do the tasks. Brewing requires you to ****ing GO TO HELL, beat some fire breathing mechanical beasts to get a chance of getting a rod from their structure, return to the overworld and craft a stand for brewing. That took me a total of 3 hours to do legit, and it is impossible for those to counter normal gameplay.
Okay, but none of that has a goddamn thing to do with the difficulty of disabling the mobs and items in question.
Even IF one could remove said features that you hate so much, that would make all who use the mod UNABLE TO PLAY MULTIPLAYER, unless they got servers that removed these objects.
As for the exp bar? ****ing texturepack can remove that.
That only hides it. It doesn't remove the incentive to spend time grinding instead of mining and building, nor does it remove the thoroughly random nature of the rewards of doing so.
The damn bar and numbers do NOTHING that affects gameplay, aside from open the possibility of dozens of powerful new tools and weapons, which makes my friends server a dozen times better.
And by "better", you mean "more about grinding and luck than about construction and resource-management skills"
I assume that you hated that the unused slab was added to the game, as well as the human mob being removed? Were you not able to catch up with sprinting? Did pistons push you to the brink of insanity? Did the lapis lazuli and other dyes make you blue? Did cavemen squidwards play clarinet off-tune?

Gross revenues from Mindcraft are approaching 100 million dollars, so Mojang will have competition, even if it's not from the big companies (see The game’s industry’s massive fail: where are all the Minecraft clones?). It's a perfect opportunity for other independent developers.
While it stinks that we can't have them now, in a year or two I think that several voxel-based survival builders will be available.
