Would really, absolutely LOVE Dragons!!! Though mabye you can find them in caves (those big rooms that look like dragon dens) and rarely they will be guarding Dragon eggs. You can try and steal the eggs, but the adults will try to kill you. If you place a Dragon egg in fire, it will hatch into a baby, tameable Dragon. It will grow very slowly, but will help fight any aggressive mob when it gets old enough. Also, you can craft a special saddle and fly around on it.
Other than that, what about the Slenderman? Very rare, and moves very quickly with the six tentacles on his back. Spawns in Forests, and kills anything smaller than him. Not sure what he could drop though...
sand crab, many spawn when you destroy a sand block in ocean/beach biome, occasionally drops sand or meat, de spawns after a minute
frogs, eggs spawn in swamp under lily pads randomly move around, turns into 2-10 tadpoles after 10 minutes, after three minutes becomes legged tadpole and can climb onto lilypads, after two minutes becomes frog or poison dart frog.
If both a male and female frog occupy same water block but no eggs, eggs spawn
speaking of bugs, i think it would be cool to see tiny spiders that spawned on leaves or in cobwebs, and weren't slowed by them. but could also climb walls and ceilings
Pigeons could come in two varieties, Wood.Pigeon and Urban.Pigeon. Wood pigeons will act like ordinary birds on Mo'Creatures although have slightly muddier colouring and perhaps a more round body. Somewhere in between the canary-type bird and the vanilla chicken. Possibly is attracted by throwing seeds around?
Urban pigeons are slightly aggressive and if you have any kind of food in your hand, they will nudge you without causing damage. However, attacking one will cause all nearby you to become frightened and they will scatter until they forget about the whole "creature that can kill us easily" thing.
A woodpecker could hover around tree trunks and make a pecking motion, although whether it actually can break wood would be something to debate (as that would lead to a load of trees that have been mutilated by the birds generating on the edge of your loaded chunks.).
As for mythologicals... Werecreatures. More of them. We already have the werewolf, perhaps other human creatures that turn into monsters at night could work. Perhaps something that can blend in with the style of what already exists, like a werelion, with a similar texture to the lion itself?
Speaking of lions, we do need some female lions thrown in. We have leopards, we have lions, but since lions come in two varieties at some point we need the female form (which would also be the one you'd be most likely to be attacked by irl, so... yeah.).
While we're thinking about mythology... Nemean Lion. Just throwing that out there.
Hawks (why am I going away from mythological oh well) probably should have the ability to pick up and drop things that they hunt. Similar to that fairy mod that's discontinued, they should pick up turtles especially and drop them from a very high height. Since you can tame turtles and name them, this could be a nice hazard for people to overcome to protect that which they have claimed for themselves, namely, build an anti-air defensive system.

One suggestion for squirrel behavior: If you chop down the tree they are in and they fall to the ground, they run up on the player's head and beat them with an acorn, causing a point or 2 of damage at about 1/2 pt per 2 hits. Sound effect of a hollow wood block (musical instrument) on each hit. After they are done with the beat down, they run off to another tree and berate the player (in squirrel talk).
I realize this is very silly but I think it would be hilarious to add the little mine turtles from ASDF Movie 5.
Basically every time a turtle spawns there is a 1/5 chance of it being a mine turtle. They look the same and act the same but when they are flipped over, punched, or something lands on top of them they explode with the force of a creeper.
One can tame them, but not with the usual items. One would feed a mine turtle gunpowder and it will be tamed.
When one wears them on one’s head, explosions will do no damage to yourself. (Just an idea that popped into my head about the explosive resistance.)

You should add crayfish/shrimp, platypus, and nets (as and object). Crayfish/shrimp are passive mobs that can be caught with nets,they don't drop anything when killed and don't attack the player,They can be cooked to restore one hunger, or be eaten raw and restore half. The platypus is a passive mob that can be tamed and named by using crayfish/shrimp, they are poisonous and will only attack when provoked, and they drop leather when killed. To breed use crayfish/shrimp, they will lay an egg immediately and the egg will take 10 minutes (real time) to hatch.
How about Venus Flytraps or something has to do with overgrown plants? I've seen the poll and it looks like Jungle would be the best ones.
Or maybe, more fictional mobs? Like Nightmare Humanoid: A humanoid that changes its color when it's being attacked by its properties.
Example: If it is being hit with sword, then it will change the color to steel.
If it is being attacked by ranged such as arrows, it will change the color to yellow.
Only way to defeat is to keep having multiple weapons and attack the humanoid with different weapons.
(The color should be changed after couple hits of the property that's been attacked with.)
Different looking types of golems?
Example: Stone Golem = Spawns in the mountains

I second this. Bugs would be great to see in Minecraft.
normal frogs - passive mob,run away when attacked has a small chance to drop frog eggs
yellow frog - neutral mob, poisons the enemy when attacked, it not spawn much easily
toads - giant frogs, agressive mob, spawn rarely and drop poison grenade
