You could have 2 different goals with your competition. 1st person to post a picture of an epic mushroom cave (showing the /day command result in the picture) and then an ongoing (Guiness books of records idea) competition for earliest discovery of a cave (in terms of MC day).
Both may be won by Ouatcheur since he will probably be knocking up grass on the morning of Day 1 and will cause the ceiling to collapse, plummeting him all the way down into one of the caves.

I am actually a slow-&-safe-surefire-progress type of player, so I don't tend to win these things.
But your last sentence would be a VERY nice idee:
- When plants with "lots of roots" are broken, any underlying grass block is converted to a normal dirt block, then that dirt is block updated.
Breaking Tall Grass would definitely count as a "plant with lots of roots".
This means that if the Grass block is over an empty space, AND you are stand on it while breaking the plant, you will fall down into the hole!

I have made a bow using sinew, what other uses do I have for sinew?
You can use them to repair leather armors.
