This is certainly possible to do without modifying any classes, and using Modloader alone.
fetch "Minecraft.theWorld.loadedEntityList" and loop that, checking for instances of the Mobs you modify. The health and texture fields are public AFAIK, so it's fairly easy to do.
You can check out how Dynamic Light keeps track of all entities (to shine light on burning ones) if you need ideas.

Wow that's cool! It'd be great if eventually you could make it apply to all mobs, and if you had permission, make it work with some custom mobs (like Mo' Creatures for example). +1
