What if you had a dirt block and the snow block on the piston, so when the pumpkin grew, you could swap the dirt for snow. (If it didn't work, it would probably be because the pumpkin uprooted when the dirt was removed)

I don't think any method of placing the pumpkin using pistons will work. Creating automatic Golem machines has been attempted, but all attempts have failed, probably because the game is checking that the player right clicks on a two-high stack of snow with a pumpkin rather than checking the spatial configuration of the components alone. I am pretty sure that the player himself must place the pumpkin.
The melons have been able to grow on dirt/grass since the sheep started to regrow wool, if I remember right.
When I found out, I was really happy. No more having to till farmland over and over and over again just to get my melons. It never made much sense that you could grow wheat on one block of farmland and never have to re-till like farmers do, but I'm not complaining. Automatic melon farms designed to harvest every <insert timeframe here>? Okay!
