I made an arena where you fight monsters and players gladiator style and i made an adventure style dungeon
I've been thinking about doing that, now that have spawn eggs. set up dispensers, and redstone, so you can dispense "waves" of mobs.
creepers....only if the arena was made of endstone or obsidian. or bedrock. zombies, yes. silverfish...I'm not sure. I don't understand them, really, so eh. endermen, I think not. they'll just leave. Ghasts, depends on the arena. Skeleton, sure. spiders, yes, but the arena would need a lip or something to prevent them from wandering off. same with cave spiders. slimes would work. zombie pigman and wolves, not so much. magma cubes and blazes would work, I bet

Now I have an Idea
if im not mistaken endermen cant zap through water so a water curtain would stop the warping. but they suck to fight either way. i actually have an arena myself. with arrow/fire charge launchers that are controlled from a loft.
I am building a large obsidian square that holds my house, farms, everything. It can only be entered through a portal from the nether. It is two blocks above the water on an ocean.
edit: this is on hard survival so it's going to take a while.

I tries ghasts but they are hard to spawn unless you have alot of room
but um having more fun with my dungeon you should definitely make one
I have been working on a bunch of planes in the air fighting, basically a big dogfight. It's been fun, of course everyone is different., but it's worth a shot. like killen joke said it depends wether you want survival or creative.

I think ive seen that on your world it looks pretty cool.
Im currently making an underground cave system in survival, but grass at the bottom, vines, waterfalls and lots of wood and leaves, looks like a jungle inside a cave, plus its super fun. In creative ive kinda tested making a wipeout course that id like to expand on, also make a connect four game with gravel and sand, fun to build and to play in multiplayer.
Any large structures when in survival mode can be fun, I have built a dream mansion complete with stables and pens for all different types of animals, and you can come up with crafty ways to defend it all from mobs. I also intend to try building a city in survival complete with aesthetics and stores or other buildings like you would typically see. Another fun one is to duplicate the house and property that you already have in real life and put it in your world. It makes for many hours of fun, and is a long term project, but with as much time as you spend on the game it sounds like it would be well suited for you!
For some reason whenever I am bored I find a village on flat or normal and try to fix them up.I hate seeing the gravel path ways but when I am done fixing the village I protect them from zombies by building a huge fence around the village and then build more houses in side the village.I'm just suggesting what I do when I am bored but most of you probably won't think this is fun and I am not expecting you too, it is just and idea.
There are a lot of good ideas here. I just realized I don't have a minecart system installed. I've mined most of the ground from levels 10-14 for diamonds and redstone. I guess I just got used to hopping. Now I have a project for this weekend thanks.
bridges over rivers
road/pathways between villages/outposts/locations
How about building a proper river where the start of it comes from a lake at higher altitude, and it descends to sea level over a long way. With waterfalls and such

Check out this mod, which now has a 1.8 brother to the 1.7 version.
If it were Survival then a Huge Farm or Mansion
