Whenever I play Minecraft, every once in a while, I will get these periods where i might have 30 fps for 4 seconds followed by 7 fps for 4 seconds, then back up to 30 for 4 and down to 7 for 4 and so on. These periods of alternation between normal fps and long lag spikes can last any where from 2 to 30 minutes. When they happen, all I can do is quit Minecraft and wait for a while to come back later. Their occurance seems random, as sometimes I can play for a few hours with no problems. They occur regardless of graphics setting and regardless of other programs running on my computer (they still happen on fast graphics, no smooth lighting, tiny view distance and with every other program closed). They even occur if I install optifine (even with smooth fps on).
I average about 20-40 fps which is very good and playable for me, but 3-8 fps really limits the game, and I'd like to be able to play without worrying about these weird lag spike periods popping up.
Has anyone else experienced this kind of problem?

2010 MacBook Pro
Mac OS X 10.6.8
2.53 GHz Intel Core 2 Duo Processor
4 GB 1067 MHz DDR3 RAM
MInecraft 1.2.3
Please don't respond with things like, "Macs suck," or, "Get a new computer," as these are hardly constructive and it is quite obvious that I have enough ram and processing power to run MInecraft smoothly.

Nah, joking. Have you checked task manager to make sure you don't have any unnecessary RAM-eating background programs running?

I did two things to solves this and it worked for me.
1: Open the task manager. Set Minecraft to high priority.
2: Kill all the chickens on your farm.
I'm not kidding about 2, I would always without fail get that lag spike near the farm. I had heard of people getting massive lag spikes in the past (No, I'm not hunting down those threads). Chickens had been the cause (something to do with the sound I think). I'm no expert so don't take it as 'fact' but like I said it worked for me.
I'm not completely familiar with Java for mac, but I would try to update Java as well as adding the updated versions of the JLWGL to the appropriate folder in the .minecraft bin (there is a wiki article on how), which can be found through a Google search. I know those things normally fix any lag spike periods that I have had in the past.
Maybe its that you're walking into new chunks and the game is generating the new terrain as you're walking so you start to lag. You stop and the frames return to normal after they generate, and then it lags again when you enter new terrain. That's just my theory.
PS Invest in something other than a Mac. Toast for example. It would run minecraft better than your Mac.
