Hey, I've been having this problem for awhile now. It seems that every 64x and above texturepack I use turns out really pixely and way to sharp on my side. Heres a example..

What you're seeing in the video's is a loss of image quality due to the video codec being used. The video is encoded and compressed, which causes the loss of the detail you're seeing on your computer.
You are seeing what the textures should look like. The video is not showing what it would actually look like. Also, some videos have been run through a post-processor for more cinematic effects.

GTX570. I can max bf3 no problem. Shouldnt have a issue with minecraft
