I'm having the same issue. Moments into playing my entire comp locks up, forcing a hard boot. The last image on the screen(My poor minecraft hand) is frozen in place. Not sure if it matters but this problem didn't occur until I downloaded the HD texture fix from the mod forums.

I'm experiencing similar problems. Mine locks up when I select a world to enter. It immediately locks the computer forcing a hard reboot. I never get to see anything. It used to be infrequent, but now, almost every time.

Windows 7 Home Premium 64 bit
4GB RAM
Intel HD Graphics (Core i5)
Psyclo, do you have any other information about your graphics card?
This problem seems to be cropping up in nVidia cards only so far, suggesting a driver incompatibility or some other error in nVidia cards with Minecraft.
Symptoms: After anywhere from 30 to 60 minutes of gameplay, my entire system encounters a hard lock up. No response from any input. Only solution is to press and hold power until system shuts down. Upon restart, possible corruption of level.dat for the world loaded at time of crash. Restoring level.dat from older save file usually makes world playable again, with the side effect of losing inventory. System reports all fine with all testing software that I've used, recent defrag and fdisk show no abnormalities. I've also done a visual inspection of the system's components, and dusted all heat-sinks and fans to insure heat build-up wasn't a factor.
Specifications:
Windows XP Professional SP3
Intel Pentium 4 2.6GHz @ 2.59GHz
1GB DDR 400 (PC 3200) RAM
nVidia GeForce 6200 256MB AGP (Running driver 267.24 w/ nVidia System Tools installed)
80GB Hard disk (Which is aging, and may also be the culprit.)
Prognosis: Barring any hardware failure within my system, I suspect that I may be encountering a similar issue to other users in this thread. Namely, a very nasty bug between Minecraft, nVidia graphics drivers, Java, or other softwares involved. Anyone with more information to contribute would be deserving a stack of for their assistance.

Minecraft causes the computer to hard lock after an unknown, random period of time. Nvidia drivers never recover properly. I have seen the system recover from graphics errors in other games (long ago.) Minecraft never recovers. Running in compatibility modes have no effect.

I fixed *my* problem, which appears identical to others on this thread (but you never know).
By installing ONLY java 64bit, my 64bit system stopped locking up. (I ran into other issues with my processor, but that was later and unrelated. result: half-dead proc DX )
This solution seems to prevent the computer from completely locking up. Now I am faced with the following error message:

in any case, http://www.java.com/en/download/manual.jsp has your download for 64bit if that is what you are using.
A friend of mine on win7 ultimate 32bit solved his issue (also very similar by all appearances) by reducing render distance from "far" to "normal."
