Perhaps some would disagree with me on this, but considering that the Endermen can be killed by all of the conventional means of combat in addition to being killed by water, I find them disappointingly easy to deal with. An idea I had to make them a more interesting enemy would be to give them a very significant resistance to damage, as if they had a full set of armor with infinite durability, and change their reaction to water to instead remove this resistance to damage when they come in contact with it, effectively weakening them.
As well, I would like to point out an idea that razar51 suggested in the "Enderman Is Sabotage!" thread, that instead of Endermen removing blocks randomly, they would instead only remove blocks that get in their way when aggresive towards you. This would both provide an interesting mechanic to the Endermen and make them a more challenging enemy, while also giving the people who are troubled by the fact that they can grief their creations some relief, knowing that the only way an Enderman will destroy parts of their buildings is through the fault of the player, not random chance.

This might make it interesting, but they definitely need to drop whatever block they are holding when they die. From what I have seen they currently do not.
I would swap out the damage resistance for better teleportation. Currently, if you are on Island A and an Endermen is 30 blocks away on Island B and you aggro it it will go to the edge of the water, stare at you for a few seconds, then jump in the water and die. While hilarious, I think they should be smarter then that.
If a situation occurs where an Enderman is trying to get to you but can find no way to do so it can long range teleport. It can only do this once every... 10 seconds or so?

This. A great way to take advantage of teleportation hijinks in combat would be to have them form tribes, like pigmen, so that if you aggro one you'll be fighting 2-5 at once.
In the suggestions forum, I proposed that Endermen teleport out of harm's way as soon as the player presses the attack button. So you miss with your strike. However, if you catch the Endermen in its attacking animation (assuming it gets one), then it cannot teleport away. So the gameplay would be timing and strategy.
Remove the susceptibility to water. That's really stupid.
As for the proposition that they pick up blocks only to get to you, I agree.
Endermen only remove natural blocks, they can't grief.
Even if that's true, there are at least two complications I can think of:
Can the game differentiate between placed blocks and spawned blocks? There are plenty of naturally occurring blocks that you might use to build things -- dirt, stone, wood, etc.
You often place things ON natural blocks -- ladders, tracks, torches, redstone, etc. If the base block is removed the object attached to it reverts to a dropped item, and if you don't know this happened, the item will disappear after five minutes.
I can testify that both of these problems exist (let alone the maybe-bug above of an Enderman with a stone brick). I've had an Enderman remove a placed dirt block with a track on it, so now there's a one-square gap in my mine cart track.
