The worst I can think of in 1.1 is passive mobs glitching through fences and walls on SMP due to their constant jumping. I would fix that. It makes maintaining a farm a tad irritating sometimes.
If you are referring to the most recent preleases /snapshots (12w07b mainly) there are far too many horrible bugs in them to just say one. For example the lighting glitches, the lack of trees generating properly in most biomes, the absence of caves. All of these will obviously have to be fixed before an official release, as the snapshots were just for testing the new features for the people who wanted to see the game's progress.
Also, I'm not to fond of zombies breaking doors for no good reason. (i.e. when they weren't actively chasing someone moments before), but I'm not too sure if it can be classified as a bug ... maybe zombies just don't like doors?

Dragon Damage is still an off switch
When the dragon is damaged by the player, it's attack is turned off and is rendered useless.
Process:
-Enter
-Stand still and let dragon attack you
-Dragon damages you and knocks you back
-Damage dragon (bow, sword or any other means)
-Dragon nudges you and doesn't damage/knock you back
In this case, I enter and punch the dragon(inflict damage on it). Notice how its damage is turned off.
I know this is going technical with the one bug rule, but I want SMP to get reinvented. The current system is highly inefficient, buggy and just in general poor.
The first bug that came to mind is the one with portals. If you make one and go into it, and go back into the portal in SMP, there's a chance it will spawn a new portal instead of spawning you at your original portal. Portal mechanics can be so frustrating in SMP.
If you destroy a light source by water at night or in a dark cave, it leaves a faint glow...I know it's been fixed but I still see it sometimes on rare occasions.
P.s: remember you only got one bug fix!

I read this was fixed in 12w06a, but I haven't personally seen any spawners in SMP since.

There's also an ancient bug where docking a boat onto slabs deals fall-damage, possibly killing the player. It's really time for that to go away.

I'm in 12w07b and my chickens in my chicken pen don't jump around at all. That might be a difference between single and multi but idk.
