Probably you'll be able to get water from them. They are, after all, wells.
I really do not see the point of them adding them as a source of water, because you could already find ponds of water in deserts that are larger than the well itself. Anyways, I think they will be part of desert ruins or something that we can journey into and loot for treasure.
I would love to see a new type of dungeon. You could go down the desert wells and land in a sandstone and lapus lazuli block room, with a spawner and chest.
the spawner would realease poisenous scorions, and in the chest you would find a glass bottle filled with an "antedote". Then, in abandoned mineshafts there would be a giant spider boss, wich you could only make vulnerable by throwing the "antedote" at it. then, in the chest the spider is gaurding, there is a item called a "Nether Stone", wich is the only way to activate a nether portal. I think that would add alot more excitment to getting to the ender dragon.

They just seem to add a little mystique, to agree with whomever. Pointless but fun. Wouldn't mind seeing them be ruins, though. If there was a little house or something that had wood, it would be really nice... resources in a desert!

Neither. They're different. Village wells are 4x4x15, desert wells are 5x5x6, and they're shaped COMPLETELY differently.
