So like you said...completely legit. Well then why are you trying to nerf endermen. Don't you want to play it completely legit?
I don't see how Endermen screwing with blocks at random all other the place makes the game any harder. It just means you have to go around fixing **** all the time.
I do think Endermen should pick up blocks, however I think they should do so when the player looks at them, so they can take apart walls between them and the player as well as teleport. Then it would be more challenging, as you can't just take advantage of the height of the Enderman and hide under a 2 block ceiling and it makes killing the Enderman a big deal lest he tear apart your structures in his attempt to kill you.
Enderman block destruction should be like Creeper explosions. You, the player, trigger it. It doesn't just happen at random no matter where you are with no ability to do something about it other than hope they don't wander into a torched area.
I also think they honestly need to be buffed as enemies in their own right too. They need double the health and they should have better AI then the other mobs. So for example, when the sun comes up, they fall in water or they fall in lava or something they should attempt to teleport from danger to the nearest safe spot that has room for them. Perhaps they could stop attacking the player when their health is low and escape by teleporting or dumping their blocks so that they could attack again later on when you aren't expecting it. Endermen need to turn from being a weak, irritating mob to a persistent, intelligent mob.
Also, if Notch wants to go the Nether route as he has done with their skin, they should teleport after you if you try to escape through a portal or even spawn in the Nether naturally as a cross dimension mob. Now that would be awesome.
The question is: Why is it such a good thing to have your creations destroyed? Do you hate them or something? Do you like playing the janitor to the wreckage they leave?
The biggest problem is that they do it without needing our interaction. It's an unnecessary punishment for just playing the game. Sure we can Enderman-proof our structures, but why should we have to? We don't Creeper-proof our structures. Creepers don't go around exploding for no reason. If we tick off the creeper they react. Similarly the Enderman ability should only be used when we catch their eyes.
Another problem is that they are deleting the world. They don't drop the blocks they pick up if they die or despawn. This means that at any moment random blocks below the ground are being deleted. Not picked up and moved but deleted. The work it can take to get some blocks makes this a very bad thing. They could be picking up diamond gold and other rare blocks and deleting them.
Now, do they need to stop picking up blocks? No. Like you said they could be expanded upon and fixed rather than just not build. For example: They might seek out certain blocks for structures that they are programmed to build. While passive they won't take any blocks that they don't need or blocks that have blocks on top of them (to prevent them from hurting trees or player walls to an extent). While angered they can pick up anything and will move any block to get to the player. If they die they drop the block they picked up.
Tada it now is not a griefer nor has its ability been removed. Only refined and they need refinement, because they don't add challenge to the game. They only make us clean up their mess while they slowly delete the world, which is bad for a game about building things.

It's a fact, Enderman need to be delt with. Not in the sence that they need to dissapear, they need to be way more formidable than they currently are, let's face it... they are an extremely weak mob for how rare they are. Their health needs to be bolstered, their teleports need to be more accurate, and they should somewhat target the player. An example of this in action; You can indirectly kill one by not looking at them untill you get really close and pour water on him. Not very hard.
Not only that, Notch,as the creator of the game, needs to conform the game not only the immature brats that cry for the AK-47 every time they see a skeleton, a ranged foe that can easily be delt with using a sword. When I first heard about Endermen, I thought they were the most brilliant mob ever conjured into existance. I stillthink they're cute, and for a long time, their block-moving didn't bother me at all.
However, what I and many other people didn't take into account was 24-hour servers. Playing on one is incredibly frustrating with Endermen around because if you don't go on for a few days, when you come back, your house or town or build will have the general texture and shape of cottage cheese. And if the world is up for a long time, a huge number of blocks will be lost, as Endermen have problems with keeping blocks when they die. Massive chunks of the world just cease to be.
As such, having Endermen be somewhat optional would solve that problem. However, if we have too many options, minecraft will be a bit cluttered, which could be unappealing for the devs, or other players. I'd prefer, personally, that Endermen be completely rethought. I like challenging mobs, but Endermen didn't work out as block thieves.
I want them not die in water, be less common, be smart and be able to build something. Like their own items they use, being able to interact with your buildings etc.
There's a difference between challenge and obtuse annoyance. Creepers, while I have issues with them not dying in the day, use their explosive ability as a weapon. Endermen just **** **** up without rhyme or reason. The game is punishing you, even if you are playing it the right way.
I'm not saying Mojang should remove their block-removing capabilities. Quite the opposite. They need to not half-ass the game and come up with something fun and challenging. Endermen need to deal and take more damage when provoked. If they grabbed blocks to move you closer to them or trap you, they would be fun and challenging. Perhaps you like the idea of building defensive structures around your place. What if they were more like barbarian tribes who attack population centers for food? What if you could set up villages in Survival, sort of like in Terraria when NPCs move in? Endermen could only deliberately raid you when you have populations to defend. That would give so much more depth to the defenses you enjoy building. Surely it would be better challenge than replacing blocks from your house.

How about the Ghast? Sounds like you are looking for a boss more then a common mob. Never the less they have MODs for people that want things more 'hardcore'.
You want something to tear your things up, why don't you just go live in the nether? They are adding a few new MOBs there so maybe that will satisfy your need for a 'challenge'. But if you think Minecraft is too easy, make it challenging, live in the nether, don't use swords or armor, maybe even blow up everything you have time to time just for a fresh start. Until then please explain to me where Endermen block moving creates challenge or adds anything good to the game for that matter.

I find that kind of offensive: Why are people like me who just want to play without a mob randomly moving blocks arround our worlds caonsidered weak somehow? This wasn't an issue before Endermen arrived and wouldn't be one if they'd never been added.
- Endermen shouldn't be able to pick up anything associated with redstone, or any player placed blocks for containing water or lava... all else is fair game
- I like the idea someone mentioned about crafting an ender block from pearls and Endermen being unable to enter or destroy that area within a certain distance. However I want those ender blocks to have a limited life span (say 100 nights) that way you'd need to continue to check and replace them, otherwise your protected area could be fair game for Endermen
- I think it would be cool if I could use the Endermen's block moving ability for my own benefits... like use the ender pearls to make "ender dust"... place "ender dust" on a block and Endermen would remove that block and any blocks that touched it... I could spread ender dust around an area and after a couple days that area would be clear/flat

And a lifespan or else its 'fair game'? When did it become reasonable to think of Endermen out to 'hunt' for our blocks. Do you enjoy the thought that right now there are Endermen wrecking peoples hard earned works of art?
3) At the rate of time it would take you to craft and place this dust and wait for the removal work, you could have cleared that land yourself. Not to mentioned there is TNT that can achieve similar land clearing effects without the need to include a griefing MOB

Except then we are still left with the ridiculous chore of cleaning up after them. I didn't spend hours building my creations so some mindless MOB could mess with it.
