So lets talk about dirt..
Its pretty useless, still you will probably have a lot of it from mining etc.
Its ugly to build with, and it has no crafting recipes.
So, what do you do with it?
Uses so far!:
1. Put it in a chest...
2. Grow grass on it...
3. Isolation (hiding)
4. Leveling areas
5. Growing trees
7. Using it for temporary towers
8. Finding your way in caves, (see Toasterific's post down this page)
9. Dirt starting home
10. Waterfall gardens
11. Underwater tunnels
12. Temporary bridges
13. Stopping lava falls
14. Emergency shelter
15. Underground farm
18. Pretending it is a frag grenade and throw it at pigs
19. Glitch for removing blocks (Had to do with farming)
20. Filling stuff quickly
I pretty much only use it to level out terrain when building structures. I also stack the dirt to get up into higher positions when building high above ground because the dirt is easy to remove without tools.
Dirts strength lies in how fast you can take it apart. I use it for scaffolding, and also to fill in dirt layers inside my wooden buildings to keep the outside insulated from the inside in case of griefer fire.
It's essential for my caves. I never get horribly lost in caves because of my system.
Torches placed on a pillar two blocks high (as pictured) is a marker. Generally it's made of cobble, as it's abundant. If they're on dirt blocks, it means the marker is null, but it was placed for a different reason. Furthermore, I seal corridors with dirt if it's worthless; I use cobble and place torches on it if I wish to explore it at a later time. I always place torches on the right side when I'm going deeper into a cave, so that I know if they're on my left I'm moving toward an exit (or a higher level. Additionally, I always place markers at level entrances.) If I need light, I simply place a null marker so it doesn't throw me
I also use dirt for other purposes, like scaffolding, fixing water currents, or filling in unsightly holes near my base. At the moment I'm working on a new base that is on a platform suspended over an ocean, and I'm planning on placing a lot of dirt blocks, letting grass growing, and planting a few trees for aesthetic reasons
I use dirt as roofing sometimes, mostly with tudor-style houses.
It's not actually ugly to look at when you use it properly.

underwater tunnels, temporary bridges, pillaring, emergency lava impediment, emergency shelter when caught outside at dark, farms underground and above tree and wheat and reed, artificial islands, scaffolding,
oh man the uses are endless, so much nicer to build temporary frames or scaffolding than cobble because it is quicker to break and shovels are cheaper and you don't even need one. Let's all sing the praises of our useful, humble dirt.
