title says it all, i get so discouraged whenever i see these amazing buildings, any tips on how i can fix that??

I'm currently working on a minetrack that runs through my massive cave, and to another cave towards the beach.
Always have projects, if you put in time you'll get something out.

Try harder, and don't get discouraged. Think of something to build, get your plans straight, then go for it. The people that make amazing things don't do it quickly, and they don't do it easily. It's an enduring task, and it requires a lot of patience and a lot of hard work.
If you're not artistic enough for appealing designs or autistic enough for massive imposing structures, try making a building that extremely functional, Ie; and underwater base with airlocks at every room or a castle with working kill pits and murder holes. Those things can be just as impressive as a Minecraft recreation of Mt. Rushmore.
Look at real life structures to get ideas, look at other people's projects to learn tips or new ways to build, and most of all DON'T JUST BUILD SQUARE ****. Be creative and force yourself to try new things.
Sometimes I build stuff into caves, like my minecart track and Blenderman Laboratories.
Placing glass and cobblestone into pre-existing caves can work wonders!

Start with a base and an idea in your head too. When I started building a galleon in Minecraft Classic (shush) I kept ****ing up until I just sat down, thought of how I wanted it to look and laid out a base. Took my time layering it and it eventually molded into what I wanted. Exactly.
Build something small.
Expand it..
Expand it some more..
Create things for it/inside it.
Plan it bigger..
Start a new world and make it again.
I find the more I build something, the better it becomes. The little **** matters :]
If you want to build things that are more intricate, detailed, and extravagant you'll want to plan the designs out on something like graph paper before you ever try it in game.
Think in anything to build, let's say a house, make a cube house, then think what simple thing would make it look better, do it, think again, do it, etc...
I would suggest by starting on something easier such as a pyramid? then move to castle and so on. Or just get inspired my seeing what other people built and try to duplicate it
In my most resent build, I thought of building something practical, an indoor farm. Then I decided I wanted waterfalls... and maybe instead of it being a square building, have it circular. Then instead of just one circle I wanted to make two intersecting circles, like a Venn diagram except without the inner arcs. Next while trying to figure out how I was going to spread the water around I opted on making a design that requires only one water spring. Next I decided it wasn't big enough so I enlarged the circles and added two more!
It was about this point that I hit up Paint to design a floor plan. My tower now sits about 55ish blocks high and I'm still working on some of the finishing touches, including designing a roof, before the final unveil.
Basically what I'm getting at is if you want a huge structure, first thing you need to do is come up with something small and practical that you want to build. Then just take it to the extreme, make things bigger, add challenges (like my 1 water source rule), add some extra details as a bit of flare, and most importantly make it even bigger!
Once you have a general idea of what you want make some models. Load up Paint zoom in to 800% and turn the grid on, this is an excellent way to draw a general floor layout. In Alpha mode, dirt and sand blocks are a great way to try to decide on a foundation shape, they are both very common and can easily be picked up without any tools. Creative mode is a good way to test how a room may look after you finish building it, just remember not to try to build everything here or you'll just end up wasting time you could use on the real thing.
Water, lava, and redstone are great ways to enhance any structure. Water tends to give a feeling of beauty and grace, while lava shows strength and power, either one used correctly can turn an impressive build into an amazing one. Redstone is all about the details, a simple locked vault with a hidden switch will show off your ingenuity, you can also build death traps or combination locks with it as well. Look it up on minecraftwiki.net especially pay attention to these devices; NOT, AND, and OR gates as well as the RS NOR latch, all of these are very basic and very practical.
Finally remember to add things to pretty up the place, flowers, reeds, signs, pictures, etc. Any extra details that can enhance the building, specifically target areas where there is little variety, for example putting a picture on a large flat wall.
Edit: I just noticed this post is a great example of how to build, I started with something small then just kept adding.
I used to be the same way. For my first one I looked on youtube for an idea and I saw someone that made a tower. So. I thought "hey I should make a tower" and so I did. I made my own tower with sort of their idea, but not completely and I improved their idea too. Here's my finished product:
I hope that you can see it alright. It's a HUGE tower =] I never thought I could make something, but I believe that this is something impressive.
