Minecraft probably uses system time to keep track of the passage of time between frames. When you change the system time, the game misinterprets what is happening as having a really low fps and plays a lot of time between frames. That being said, it still seems strange it would act in this particular way.

I assume you have Windows Movie Maker which deletes the **** out of every Java game recorded with Fraps for some reason.

well no, i'm just messing around, the file inst corrupt, i wanted to make a 'HIM' joke and just didn't want to upload it, and no i dont have WMM on this computer.
I believe the reason it does this is so the game can keep a consistent speed regardless of framerate. Otherwise, a person who plays the game at 100fps would mine stuff 10x faster than a person who runs the game at 10fps. I know Guitar Hero works the same way; you can play with FPS numbers reaching in the hundreds but it plays at the same speed as when you play it at 60fps.
I hope this works on macs, because travelling at night is impossible for me. Will test and let y'all know.

Doesn't seem to work with the mac. Perhaps macs use different systems to tell the user what time it is and to tell the application how much time has passed.
