I think all this depends on which server you play on. If you prefer having hotels, gold and roles, then you will go to an RP server. Minecraft is a sandbox game, so you can choose to play anyway you want, which means people will flock to the servers that fit their idea of the game best.
Not that I disagree with a hunger/stamina system of some kind, but I'd think the general consensus of an INN/Tavern/whatever would be to stay inside overnight, assuming the difficulty is ramped up, or you really suck at fighting. People who are good at monster slaughter could be hired to, say, clean out the basement, attic, or any redstone hallways between the walls/floors.

When you join a freaking external server, it can be any time of day. If you join at the middle of the bloody night, it's pretty obvious that you'll be butt naked with no time to grab weapons before mobs surround you. But Oh! look! a tavern a little while away!

I can't see any other way right now to make inns feasible than to implement hunger and/or thirst, or warmth. Monsters are currently laughably easy to get away from, and even if notch makes them harder, you can just dig down.

If you were playing an RP server, and you did this, you would be kicked for griefing. Then it would be fixed.
If you were playing a normal survival server, no one would really care, because there probably wouldn't be a hotel in the first place. People would be dying so much, you wouldn't have time to put a shitload of obsidian in a room, nor would you be able to get that much for that matter. Think of it like a FPS multiplayer server. Like Halo or Modern warfare 2.

It's clear to me that the people against any form of minecraft in-game business, be it stores, hotels, or banks, are greifers. It's fine to not like the concept, and it's fine if you give the same tired statement everyone else gives, "It'll never take off" "I won't use it", but those of you who are deliberately dancing around the words of the supporters to give an example of, hilariously specific, "What if I do such and such to **** you over?" -- you are the griefers who I will gladly ban, and see to it you are constantly banned from any server.

It's repairable damage AND adheres to your rules of letting players build what they want in the room and you'd clean up after.
