Back in 1.7.3 when I first found out about minecraft. To me, those were minecraft's glory days. It was also when I first found minecraft. I watched inthelittlewood's Redmurk Mystery with Toby. From there I saw Simon and Lewis' channel, Blue Xephos. I thought to myself. I must get this game! So, I got the game and it had a spark that I don't think any other game that I played had. I wasn't confined to an objective. It was my world, my rules, my imagination. Although I used to run at a crappy 13fps, it didn't matter to me, because I was still having the most fun I ever had with a game.
Adventure Update -
By the time 1.8.2 came out I had a much better computer and was a pro at minecraft. I watched minecon live streams and it was all good. I started to play 1.8.2 and was very surprised, I liked it. By the time 1.0 came out. I was starting to get bored of the game and I didn't think that it would ever happen. There wasn't start spark anymore.
So, I didn't have much to say, but anyway, let me here what you think.
It's not the same because Notch, Jeb, Dinnerbone and all the others added more stuff. It's called evolving and this is what Minecraft is, it's an evolving game.

Oh my god another one of these things -_-... Minecraft is fine it might just be that you have run out of ideas. Try to think of new things to do, it helps me

I think you're going to get the brunt of the Minecraft fanboys defending their Minegod, I, for one believe that Minecraft is becoming the new Runescape. I played around the time of Alpha and it was a good game centered around having fun and everything being bright and happy, simplicity at its finest, but now all they seem to care about is making money, not with the updates, but with all the merchandise and the devs leaving to work on the other games for their company.
TL;DR Minecraft Devs are getting greedy, thus the game will start suffering.
I for one like the direction that the game is going, but if you don't it's not like you are forced to play with the new content. Don't like the end? Don't go! Don't like enchanting? Don't use it. It is really that simple. I don't understand how adding depth to a game is bad.
I'm kind of an odd one out here since I started playing at 1.3.2 (official release, not beta). I have watched plenty of gameplay of the beta versions on YouTube, though.
I like that MineCraft has more depth now. It's more interesting to play since there is more content and more mechanics. Sure, mods can add a bunch, but having these things in the vanilla (and to some, proper) version of MineCraft is nice since it means fewer mods to keep track of just to have that more complex experience.
But yeah, if you don't like the new content, don't use it!
Also, there are a few tools that can backdate MineCraft to older versions. You might like those if you want the old MineCraft back.

And that's a GOOD thing in my opinion. I'll admit that I'm biased in that I started playing only about six months ago so most of the stuff you're complaining about was already in the game when I got it. But, I've seen videos of older version of Minecraft and it just looks boring. I like having new things to learn and explore and the game play is still completely open and sandbox - there's just more toys in the sandbox now is all.
Don't get me wrong, I am worried that eventually there will be a saturation point where they can't add any more new stuff because anything new will have to be so rare as to never be seen or we'll just be tripping over stuff left and right and not have any "open" space to be creative in ourselves. I'll also be the first to join the mob with the pitchforks and torches if the game ever develops a plot line or "quests". But until then it's all good in my mind.
So challenge yourself. I got a bit sick of vanilla, so I started playing with hardcore. From there I went to ultrahardcore. From there I went to defeat the enderdragon with ultrahardcore and no crafting table allowed, and I frickin succeeded and it was the greatest feeling ever. Minecraft is great in that it is what you make of it. Set yourself new challenges, speed challenges, build challenges, insane odds challenges. Make your own fun instead of waiting for people to bring it to you.
You're right, it is different. It's gotten better. I joined in beta 1.2, and because of that I've gotten bored of minecraft several times. Just leave the game for a month or so and then come back.

Yes, it has changed. I personally like the updates and additions to the game. Like you said, there was no objective previously in Minecraft. And yes, there is one now, but you aren't required to finish it. If you like the older versions, downgrade.
Minecraft has evolved, and while some people want to call us fanboys for "defending our Minegod" like a giant toolbox, we understand that there are numerous ways to play the game. MORE than there used to be. You're entitled to your view... But it's wrong. To be honest it's not even opinionated, it's just something people say when they run out of ideas, and then blame the game for their lack of creativity.
I for one have taken to building a 500x500 citadel in Technic to replace my former vanilla 139x139 castle. (It was built when build height was only 127, and not +/- 255.) I have more ideas thanks to what the game revolves around these days. Mods.
I played in 1.2 Alpha and the only thing I miss is the green grass. Not this sickly color it has now. Oh, and the lack of 50,000x50,000 oceans every 2 steps making the entire world a few large landmasses.

Ok, look. You aren't bored because of new content, which makes no sense, by the way. I've had this little box of cubes since beta 1.4. I'm not bored. You, my good sir, are bored because you've run out of new things to discover when playing. Listen to me, set some GOALS. Have you beaten the Enderdragon? Found a village and made it awesome? Built a full power beacon? Made an awesome house? Try and get one of every possible block you can get in-game. I've been at that since 1.3.2. (still need to get myself a silk touch pick) Find a server and make some friends! There's still plenty to do. You just need to think of it.

I'm not sure if I like the new Minecraft. There are some features I like, and some that I don't. Meanwhile, in the old updates, those features weren't as troublesome or didn't exist (the only issues I have with MC are terrain, difficulty, combat, and the Wither).
I hate to say it, but those features are preventing me from having fun; specifically, the terrain. While there are a lot of features I do like in the new versions, I can't say that I will ever have nearly as much fun as I used to. I might fiddle around with a snapshot for an hour or two, maybe check in on a server, but that's it until Mojang stops going "ADD ALL TEH THINGZ!!!!!" and starts going "IMPROVE ALL TEH THINGZ!!!!!".

Minecraft now has blocks that you can use to build with.
